Green Beans sauteed with Pancetta makes for a savory and delicious side dish that goes with any meat or fish. Doesn't take much time to make these , and the flavor is worth the little bit of extra effort!
INGREDIENTS:
12 OZ Fresh Green Beans washed (and trimmed if necessary)
3 oz Pancetta, diced
1 small Onion small, diced
2 TBS Butter
2 TBS EVOO
1/2 cup White Wine
pinch of Kosher Salt
1/4 tsp Cracked Black Pepper
In a large pan, turn on burner to medium low and cook Pancetta until crisp ( about 5 minutes) and remove from pan to a plate, leaving any grease in the pan. Add in EVOO & Onion and cook until translucent , approximately 6-7 minutes.
Add in Butter and allow the butter to melt completely . Add in wine and allow wine to cook down for 6-8 minutes ( until it starts to make a sauce). Add in Green Beans and return the Pancetta to the pan and stir together, add salt and pepper and cover . Continue to cook the Green Beans for another 10 minutes, stirring often until softened just enough that there is still a little bite to them. If you like your Green Beans really soft, add about 4-5 more minutes.
For a little bit of extra flavor, top with fresh shredded Parm when you serve them!
