Garlic Croutons

I often times have leftover Sourdough or Pugliese bread , and with there only being 3 of us in the house anymore, (my Husband, myself and my youngest Son) we don't always get through the fresh bread before it starts to go stale. This is such a great use of old bread instead of throwing it away! These homemade Croutons are so delicious , I promise you will want to snack on them right after you've pulled them out of the oven!

INGREDIENTS

  1. 4 cups of any old or stale artisan bread , cut into approximately 1/2 inch cubes (use good, sturdy bread, such as Sourdough, Pugliese, French, Italian, etc)

  2. 1/4 cup EVOO

  3. 2 Cloves Garlic, fine minced

  4. 1/2 tsp Dried Basil

  5. 1/2 tsp Dried Parsley

  6. 1/2 tsp Kosher Salt

Turn on oven and heat to 350 degrees.

In a small bowl, whisk together EVOO, Garlic, Basil, Parsley and Salt . Allow this mixture to sit while you cube up the bread.

Prepare a baking sheet and cover it with Aluminum foil.

Use a medium sized bowl to put the bread cubes in as you cut them up. Once done cubing up the bread, pour the Garlic Oil mixture over the bread cubes and stir with a spoon until all of the bread is thoroughly coated with the oil and Garlic.

Pour the bread cubes out onto the baking sheet and spread out evenly. Bake for 15 minutes, turning and mixing half way through so all the cubes get evenly toasted. The bread cubes may still seem semi soft when they are done, but will continue to crisp up as they cool. Allow to cool for about 5 minutes. Store in air tight container.

Add to any salad and enjoy!
